In a mixing bowl, combine the canned salmon, egg, breadcrumbs, onion, mayonnaise, lemon juice, garlic powder, and black pepper. Mix well until combined.
Divide the mixture into 4 equal portions and form into patties.
Heat olive oil in a skillet over medium heat. Add the patties and cook for about 4–5 minutes per side, or until golden brown and cooked through.
Remove from skillet and drain on paper towels. Serve hot with a squeeze of lemon or dipping sauce of choice.
Notes
These salmon patties are excellent with tartar sauce or on a sandwich bun. You can use fresh cooked salmon instead of canned if preferred.
