Ingredients
  

Salmon Mixture

  • 15 oz canned salmon drained and flaked
  • 1 egg beaten
  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped onion
  • 1 tbsp mayonnaise
  • 1 tsp lemon juice freshly squeezed
  • 1/2 tsp garlic powder
  • 1/4 tsp black pepper
  • 2 tbsp olive oil for frying

Instructions
 

  • In a mixing bowl, combine the canned salmon, egg, breadcrumbs, onion, mayonnaise, lemon juice, garlic powder, and black pepper. Mix well until combined.
  • Divide the mixture into 4 equal portions and form into patties.
  • Heat olive oil in a skillet over medium heat. Add the patties and cook for about 4–5 minutes per side, or until golden brown and cooked through.
  • Remove from skillet and drain on paper towels. Serve hot with a squeeze of lemon or dipping sauce of choice.

Notes

These salmon patties are excellent with tartar sauce or on a sandwich bun. You can use fresh cooked salmon instead of canned if preferred.
