Ingredients
  

For the Chicken

  • 4 boneless, skinless chicken breasts pounded to even thickness
  • 1 lime juice freshly squeezed
  • 1 orange juice freshly squeezed
  • 1 tbsp olive oil
  • 2 cloves garlic minced
  • 1 tsp cumin
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper

For the Rice & Beans Bliss

  • 1 cup long-grain rice uncooked
  • 2 cups chicken broth
  • 1 can black beans drained and rinsed
  • 1/2 tsp ground cumin
  • 1/2 tsp garlic powder
  • 1 tbsp fresh cilantro chopped, for garnish

Instructions
 

  • In a mixing bowl, combine lime juice, orange juice, olive oil, garlic, cumin, paprika, salt, and pepper. Add chicken breasts and marinate for at least 15 minutes.
  • In a medium pot, combine rice and chicken broth. Bring to a boil, then cover and reduce heat to low. Simmer for 15-20 minutes or until rice is tender and broth is absorbed. Stir in black beans, cumin, and garlic powder. Keep warm.
  • Heat a skillet or grill pan over medium-high heat. Cook chicken for 5–7 minutes per side or until fully cooked and golden brown on the outside.
  • Serve the chicken on a bed of rice and beans. Garnish with fresh cilantro.

Notes

This dish pairs perfectly with a side of sautéed vegetables or a fresh salad. You can also substitute the black beans with pinto or kidney beans for variation.
