Ingredients
  

  • 4 fillets salmon, skinless
  • 2 tbsp olive oil
  • 1 cup spinach, fresh, chopped
  • 1/4 cup cream cheese, softened
  • 1/4 cup shredded mozzarella cheese
  • 1/4 cup parmesan cheese, grated
  • 1 clove garlic, minced
  • 1 tbsp lemon juice
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions
 

  • Preheat the oven to 375°F (190°C). Line a baking dish with parchment paper or lightly grease it with cooking spray.
  • Heat olive oil in a skillet over medium heat. Add the minced garlic and cook for 1 minute until fragrant.
  • Add the chopped spinach to the skillet and sauté for 2-3 minutes until wilted. Remove from heat and set aside to cool slightly.
  • In a medium bowl, combine the cream cheese, mozzarella cheese, parmesan cheese, cooked spinach, lemon juice, salt, and pepper. Mix until well combined.
  • Cut a slit down the center of each salmon fillet, creating a pocket. Stuff each fillet with the spinach and cheese mixture, ensuring it’s packed inside.
  • Place the stuffed salmon fillets in the prepared baking dish. Drizzle with a little olive oil and season with additional salt and pepper, if desired.
  • Bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.
  • Serve the stuffed salmon hot, garnished with fresh herbs or a lemon wedge if desired.

Notes

This recipe is also delicious with a side of roasted vegetables or a light salad. Feel free to swap the spinach with other greens like kale or arugula for a different flavor.
