This Slow Cooker Chicken Cacciatore is a hearty, comforting dish loaded with tender chicken, vibrant bell peppers, and a rich tomato-based sauce. Perfect for busy days when you want a delicious homemade meal!
In a large skillet over medium-high heat, sear chicken thighs on both sides until lightly browned, about 3–4 minutes per side. (Optional for extra flavor.)
Place sliced onions, bell peppers, and garlic at the bottom of the slow cooker.
Lay the browned chicken thighs on top of the vegetables.
In a bowl, mix crushed tomatoes, chicken broth, oregano, basil, salt, and pepper. Pour over the chicken.
Cover and cook on low for 6–7 hours or on high for 3–4 hours, until the chicken is tender and cooked through.
Garnish with chopped fresh parsley before serving. Serve over pasta, rice, or polenta if desired.
Notes
For a thicker sauce, remove the lid for the last 30 minutes of cooking. You can also add mushrooms or olives for extra flavor!
