Ingredients
  

  • 2 cups cooked white rice preferably day-old
  • 1/2 lb beef sirloin or flank steak thinly sliced
  • 1 large onion thinly sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 2 teaspoons sesame oil
  • 2 cloves garlic minced
  • 2 tablespoons vegetable oil for stir-frying
  • 2 eggs lightly beaten
  • 2 tablespoons green onions chopped, for garnish

Instructions
 

  • Heat 1 tablespoon vegetable oil in a wok or large skillet over medium-high heat. Add beef and stir-fry until browned and just cooked through. Remove and set aside.
  • In the same wok, add the remaining 1 tablespoon oil. Add the sliced onion and cook for 2–3 minutes until slightly caramelized. Add garlic and cook for another 30 seconds.
  • Push the onions to one side of the pan. Add beaten eggs to the other side and scramble until just set.
  • Add the rice to the pan and toss everything together. Return the beef to the pan and stir in soy sauce, oyster sauce, and sesame oil. Mix until heated through and well combined.
  • Remove from heat and garnish with chopped green onions before serving.

Notes

Leftover rice works best for fried rice to avoid sogginess. You can substitute beef with chicken or tofu for variation.
