Instructions
Preheat the oven to 375°F (190°C). Heat olive oil in a large skillet over medium-high heat.
Season the salmon fillets with salt and pepper on both sides. Place the salmon fillets in the skillet, skin-side down (if using skin-on). Cook for 3-4 minutes per side until the salmon is browned and cooked through. Remove from the skillet and set aside.
In the same skillet, melt butter over medium heat. Add the garlic and sauté for 1 minute until fragrant.
Stir in the heavy cream, chicken broth, Dijon mustard, lemon juice, and Italian seasoning. Bring the mixture to a simmer and cook for 2-3 minutes, until the sauce thickens slightly.
Return the salmon fillets to the skillet, spooning some of the sauce over the top. Let it simmer for another 2-3 minutes until the salmon is fully coated with the sauce.
Sprinkle the salmon with grated Parmesan cheese and chopped parsley for garnish. Serve immediately with your choice of sides.
