Ingredients
  

  • 2 cups leftover mashed potatoes cold or room temperature
  • 2 large eggs
  • 1 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp chopped green onions
  • 1/2 tsp garlic powder
  • salt and pepper to taste
  • non-stick spray or butter for greasing the muffin tin

Instructions
 

  • Preheat oven to 400°F (200°C). Grease a 12-cup muffin tin with non-stick spray or butter.
  • In a large bowl, mix together mashed potatoes, eggs, cheddar cheese, Parmesan, green onions, garlic powder, salt, and pepper until well combined.
  • Divide the mixture evenly among the muffin cups. Press gently to flatten the tops.
  • Bake for 20–25 minutes or until golden brown and crispy on top.
  • Let cool slightly before removing from the tin. Serve warm.

Notes

You can add cooked bacon, chopped herbs, or even jalapeños for an extra twist. These also freeze well—just reheat in the oven or air fryer.
