Ingredients
  

For the Bites

  • 1 1/2 cups hazelnuts lightly toasted
  • 1 cup medjool dates pitted and chopped
  • 1/4 cup unsweetened cocoa powder
  • 1 tsp vanilla extract
  • 1/8 tsp salt
  • 2 tbsp maple syrup optional, for added sweetness

For the Coating (optional)

  • 1/2 cup chopped hazelnuts or shredded coconut for rolling

Instructions
 

  • Add toasted hazelnuts to a food processor and pulse until finely ground.
  • Add chopped dates, cocoa powder, vanilla, salt, and maple syrup. Process until mixture is sticky and holds together when pressed.
  • Roll the mixture into 1-inch balls and place them on a lined baking sheet.
  • Optional: Roll each ball in chopped hazelnuts or shredded coconut for extra texture.
  • Refrigerate for at least 30 minutes before serving. Store in an airtight container in the fridge for up to 1 week.

Notes

For a more decadent version, drizzle the bites with melted dark chocolate before chilling.
