For the Bites

hazelnuts
lightly toasted

medjool dates
pitted and chopped
1/4

unsweetened cocoa powder

vanilla extract

salt

maple syrup
optional, for added sweetness
For the Coating (optional)

chopped hazelnuts or shredded coconut
for rolling
Instructions
Add toasted hazelnuts to a food processor and pulse until finely ground.
Add chopped dates, cocoa powder, vanilla, salt, and maple syrup. Process until mixture is sticky and holds together when pressed.
Roll the mixture into 1-inch balls and place them on a lined baking sheet.
Optional: Roll each ball in chopped hazelnuts or shredded coconut for extra texture.
Refrigerate for at least 30 minutes before serving. Store in an airtight container in the fridge for up to 1 week.
Notes
For a more decadent version, drizzle the bites with melted dark chocolate before chilling.
