Ingredients
  

  • 1 lb ground beef
  • 1 small onion chopped
  • 1 can cream of mushroom soup 10.5 oz
  • 1/2 cup milk
  • 4 cups potatoes thinly sliced
  • 1 1/2 cups cheddar cheese shredded, divided
  • 1 tsp salt or to taste
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder

Instructions
 

  • Preheat the oven to 350°F (175°C) and grease a 9x13 inch baking dish.
  • In a skillet over medium heat, cook the ground beef and chopped onion until browned and fully cooked. Drain any excess grease.
  • In a bowl, mix the cream of mushroom soup, milk, salt, pepper, and garlic powder until combined.
  • Layer half of the sliced potatoes in the bottom of the baking dish. Spread half of the cooked beef mixture over the potatoes, then pour half of the soup mixture on top. Sprinkle with 1/2 cup of shredded cheese.
  • Repeat the layers with the remaining potatoes, beef mixture, soup mixture, and another 1/2 cup of cheese.
  • Cover the dish with foil and bake for 45 minutes. Then remove the foil, top with the remaining 1/2 cup of cheese, and bake uncovered for another 15 minutes until the potatoes are tender and the top is golden and bubbly.
  • Let the casserole rest for 5–10 minutes before serving.

Notes

You can add green beans or corn between the layers for extra texture and nutrition. Great for leftovers too!
