Ingredients
  

  • 1 lb ground beef
  • 1 cup long-grain white rice rinsed
  • 1 can diced tomatoes 14.5 oz, undrained
  • 1 cup beef broth
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp paprika
  • 1/2 tsp chili powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil
  • 1/2 cup shredded cheese cheddar or mozzarella

Instructions
 

  • In a large skillet, heat olive oil over medium heat. Add ground beef and cook until browned, breaking it apart as it cooks.
  • Drain excess fat from the beef, then stir in garlic powder, onion powder, paprika, chili powder, salt, and black pepper.
  • Add the rice, diced tomatoes (with juices), and beef broth. Stir to combine.
  • Bring to a boil, then reduce heat to low. Cover and simmer for about 18-20 minutes, or until the rice is tender and the liquid is absorbed.
  • Remove from heat, then sprinkle shredded cheese on top. Cover and let it sit for a few minutes to melt the cheese.
  • Serve hot and enjoy!

Notes

Feel free to add vegetables such as bell peppers or peas for extra flavor and nutrition. You can also use ground turkey or chicken for a leaner option.
