Ingredients
  

  • 4 pieces chicken breasts, boneless and skinless
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 4 medium carrots, peeled and cut into strips
  • 1 tbsp honey
  • 1 tbsp fresh parsley, chopped

Instructions
 

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • In a small bowl, combine olive oil, garlic powder, oregano, thyme, salt, and pepper. Rub this mixture over the chicken breasts.
  • Place the chicken breasts on the prepared baking sheet. Arrange the carrots around the chicken.
  • Drizzle the carrots with a little olive oil and a pinch of salt and pepper. Roast in the oven for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the carrots are tender.
  • Once cooked, drizzle the chicken and carrots with honey for a touch of sweetness and garnish with fresh parsley.

Notes
