Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 3 cups shredded lettuce iceberg or romaine
  • 1 cup cherry tomatoes halved
  • 1 cup shredded cheddar cheese
  • 1 cup canned black beans drained and rinsed
  • 1 cup corn kernels canned or frozen, drained
  • 2 cups Doritos chips crushed slightly
  • ranch dressing or Catalina dressing to taste

Instructions
 

  • In a skillet over medium heat, cook the ground beef until browned. Drain excess fat if needed.
  • Add taco seasoning and a splash of water. Stir and simmer for 2–3 minutes. Remove from heat and let cool slightly.
  • In a large mixing bowl, combine lettuce, tomatoes, cheese, black beans, and corn.
  • Add the seasoned beef and gently toss everything together.
  • Just before serving, stir in the crushed Doritos and drizzle with your preferred dressing. Toss lightly and serve immediately.

Notes

For a vegetarian version, skip the ground beef and add more beans or grilled veggies. You can also mix in avocado or jalapeños for extra flavor.
