Ingredients
  

Brownies

  • 1/2 cup unsalted butter melted
  • 2/3 cup granulated sugar
  • 2 large eggs room temperature
  • 1/3 cup unsweetened cocoa powder
  • 1/2 tsp salt
  • 1/2 tsp vanilla extract
  • 1/2 cup all-purpose flour

Ganache Topping

  • 1/2 cup heavy cream
  • 1 cup semi-sweet chocolate chips
  • rainbow candy-coated chocolate chips or sprinkles for topping

Instructions
 

  • Preheat oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper.
  • In a bowl, whisk together melted butter and sugar. Add eggs and vanilla and whisk until smooth.
  • Sift in cocoa powder, salt, and flour. Stir until just combined.
  • Pour batter into prepared pan and smooth the top. Bake for 18–22 minutes or until set.
  • Let brownies cool completely in the pan.
  • To make ganache: Heat heavy cream until steaming, then pour over chocolate chips. Let sit for 2 minutes, then stir until smooth.
  • Spread ganache over cooled brownies. Add rainbow candy toppings. Chill for 1 hour until set.
  • Cut into squares and enjoy!

Notes

For extra fudgy brownies, don’t overbake. These store well in the fridge and can be frozen for up to 2 months.
