Ingredients
  

  • 1 lb ground beef
  • 1 small onion diced
  • 1 green bell pepper diced
  • 2 cloves garlic minced
  • 1 1/2 cups long-grain white rice uncooked
  • 3 cups beef broth
  • 1 tsp Cajun seasoning plus more to taste
  • 1/2 tsp paprika
  • 1/2 tsp dried thyme
  • 1/2 tsp black pepper
  • 1/4 tsp salt adjust to taste
  • optional green onions chopped for garnish

Instructions
 

  • In a large skillet over medium heat, cook the ground beef until browned. Drain excess grease if needed.
  • Add the diced onion, green bell pepper, and minced garlic. Sauté for 4-5 minutes until softened.
  • Stir in the uncooked rice and cook for 1-2 minutes to lightly toast the rice.
  • Add the beef broth, Cajun seasoning, paprika, thyme, black pepper, and salt. Stir to combine.
  • Bring the mixture to a boil, then reduce heat to low. Cover and simmer for 20-25 minutes, or until the rice is cooked and liquid is absorbed.
  • Fluff with a fork and garnish with chopped green onions if desired. Serve hot!

Notes

For extra flavor, add cooked chicken livers or sausage to the mix! Adjust Cajun seasoning to your preferred spice level.
