Ingredients
  

  • 2 cups shredded romaine lettuce
  • 2 cups shredded red cabbage
  • 1 cup shredded carrots
  • 2 cups cooked chicken breast sliced or shredded
  • 1/2 cup edamame shelled and cooked
  • 1/2 cup sliced almonds toasted
  • 1 cup crispy wonton strips
  • 2 tbsp toasted sesame seeds
  • 1/4 cup green onions thinly sliced

Sesame Dressing

  • 1/4 cup soy sauce low sodium preferred
  • 2 tbsp rice vinegar
  • 1 tbsp sesame oil toasted
  • 1 tbsp honey
  • 1 tbsp olive oil
  • 1 tsp ginger grated
  • 1 clove garlic minced

Instructions
 

  • In a small bowl, whisk together all the sesame dressing ingredients until well combined. Set aside.
  • In a large mixing bowl, combine the romaine lettuce, red cabbage, carrots, cooked chicken, edamame, almonds, green onions, and sesame seeds.
  • Pour the dressing over the salad and toss gently to coat everything evenly.
  • Top with crispy wonton strips just before serving to maintain crunchiness.
  • Serve immediately and enjoy!

Notes

Feel free to add mandarin oranges, cucumber slices, or red bell pepper for extra color and flavor. For a spicier kick, mix a little sriracha into the dressing!
