Oven Roasted Chicken Thighs

  • 4 pieces bone-in chicken thighs skin on
  • 2 tbsp olive oil

Spring Herb Mix

  • 2 cloves garlic minced
  • 1 tbsp fresh rosemary chopped
  • 1 tbsp fresh thyme chopped
  • 1 tsp salt to taste
  • 1 tsp black pepper freshly ground

Instructions
 

  • Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • In a small bowl, combine olive oil, minced garlic, chopped rosemary, chopped thyme, salt, and pepper to create the spring herb mixture.
  • Rub the herb mixture generously over the chicken thighs, ensuring each piece is evenly coated.
  • Place the chicken thighs on the prepared baking sheet, skin-side up, and roast in the preheated oven for 35-40 minutes or until the chicken skin is crispy and the internal temperature reaches 165°F (75°C).
  • Remove from the oven and let rest for 5 minutes before serving.

Notes

For an extra crispy skin, broil the chicken for the last 2-3 minutes of cooking.
