Ingredients
  

  • 2 lbs chicken wings separated into flats and drumettes
  • 2 tbsp vegetable oil plus more for griddle
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp black pepper
  • 1 tsp salt
  • optional hot sauce or wing sauce for tossing

Instructions
 

  • Preheat the griddle over medium heat and lightly oil the surface.
  • Pat the chicken wings dry with paper towels to remove excess moisture. This helps them get crispy.
  • In a large bowl, toss the wings with vegetable oil, garlic powder, paprika, black pepper, and salt until evenly coated.
  • Place the wings on the griddle in a single layer, not touching. Cook for about 10 minutes, flipping occasionally, until they start to crisp and brown.
  • Lower the heat slightly and continue to cook for another 10 minutes, flipping frequently, until wings are cooked through and crispy on all sides (internal temperature should reach 165°F / 74°C).
  • Optional: Toss the cooked wings in your favorite wing sauce or serve dry with dipping sauces.

Notes

For extra crispy wings, you can finish them with a quick high-heat sear right before serving. Serve with ranch, blue cheese dressing, or your favorite dipping sauce!
