Ingredients
  

For the Chicken

  • 500 g boneless chicken breast or thighs cut into small pieces
  • 1/2 cup cornflour
  • 1/4 cup all-purpose flour
  • 1 egg beaten
  • 1 tbsp soy sauce
  • 1/2 tsp black pepper
  • oil for deep frying

For the Sauce

  • 1 tbsp oil for stir-frying
  • 4 garlic cloves minced
  • 1 green chili sliced
  • 1/2 onion sliced
  • 1/2 green bell pepper sliced
  • 2 tbsp soy sauce
  • 1 tbsp red chili sauce
  • 1 tbsp tomato ketchup
  • 1/2 tsp sugar
  • 2 tbsp water
  • spring onions for garnish

Instructions
 

  • In a bowl, mix chicken with cornflour, flour, egg, soy sauce, and black pepper. Let it marinate for 10–15 minutes.
  • Heat oil in a deep pan and fry the chicken pieces in batches until golden and crispy. Drain on paper towels.
  • In a separate pan, heat 1 tbsp oil. Add minced garlic and sliced chili; sauté for 30 seconds.
  • Add onions and bell peppers. Stir-fry on high heat for 2–3 minutes until slightly softened.
  • Add soy sauce, chili sauce, ketchup, sugar, and water. Stir and simmer for 2 minutes.
  • Toss in the fried chicken and coat evenly in the sauce. Cook for 2 more minutes on high heat.
  • Garnish with chopped spring onions and serve hot.

Notes

Adjust spice level by increasing or reducing the chili sauce. For extra crispiness, double fry the chicken.
