Ingredients
  

Crust

  • 1 cup vanilla wafer crumbs
  • 4 tablespoons unsalted butter melted

Cheesecake Filling

  • 8 oz cream cheese softened
  • 1 box instant banana pudding mix (3.4 oz / 96g)
  • 1 cup cold milk
  • 1 cup whipped topping like Cool Whip
  • 1 banana sliced, optional for garnish
  • vanilla wafers for garnish

Instructions
 

  • Mix the vanilla wafer crumbs and melted butter in a bowl until well combined.
  • Press the mixture into the bottoms of mini muffin tins or silicone molds. Freeze for 10 minutes to set.
  • In a large bowl, beat the cream cheese until smooth.
  • Add banana pudding mix and cold milk. Mix until thickened.
  • Fold in the whipped topping until fully incorporated.
  • Spoon or pipe the filling onto the prepared crusts and smooth the tops. Chill for at least 3 hours or until set.
  • Top with sliced banana and a vanilla wafer before serving, if desired.

Notes

Store in the refrigerator and enjoy within 3 days. Freeze for up to 1 month without toppings.
