Ingredients
  

  • 1 lb ground beef lean preferred
  • 2 medium zucchinis grated and squeezed to remove moisture
  • 1 egg lightly beaten
  • 1/2 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil for frying

Instructions
 

  • In a mixing bowl, combine ground beef, grated zucchini, egg, Parmesan cheese, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  • Shape the mixture into small bite-sized patties or meatballs.
  • Heat olive oil in a skillet over medium heat. Cook the bites in batches for about 3–4 minutes per side or until browned and cooked through.
  • Serve warm with your favorite dipping sauce or on a bed of greens for a light meal.

Notes

You can bake the bites at 400°F (200°C) for 18–20 minutes if preferred. Add shredded cheese or herbs for extra flavor.
