Ingredients
  

Main Ingredients

  • 1 1/2 lbs boneless skinless chicken thighs
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1/4 tsp chili powder or more to taste
  • 4 cups chicken broth low sodium
  • 1 can diced green chiles 4 oz can
  • 1 can white hominy drained and rinsed, 25 oz

For Serving

  • shredded cabbage
  • radishes thinly sliced
  • lime wedges
  • fresh cilantro chopped
  • tortilla chips optional

Instructions
 

  • Add chicken thighs, onion, garlic, cumin, oregano, chili powder, chicken broth, green chiles, and hominy to a slow cooker.
  • Stir to combine. Cover and cook on low for 6–7 hours or high for 3–4 hours, until chicken is tender and cooked through.
  • Remove chicken, shred it with two forks, then return it to the slow cooker. Stir well to combine.
  • Ladle the posole into bowls and top with your choice of shredded cabbage, sliced radishes, fresh cilantro, and a squeeze of lime.

Notes

This dish gets even better the next day. Store leftovers in the fridge for up to 4 days or freeze for later enjoyment.
