Instructions
Add chicken thighs, onion, garlic, cumin, oregano, chili powder, chicken broth, green chiles, and hominy to a slow cooker.
Stir to combine. Cover and cook on low for 6–7 hours or high for 3–4 hours, until chicken is tender and cooked through.
Remove chicken, shred it with two forks, then return it to the slow cooker. Stir well to combine.
Ladle the posole into bowls and top with your choice of shredded cabbage, sliced radishes, fresh cilantro, and a squeeze of lime.
Notes
This dish gets even better the next day. Store leftovers in the fridge for up to 4 days or freeze for later enjoyment.
