Ingredients
  

Muffin Base

  • 6 cups bread cut into cubes (day-old or slightly stale preferred)
  • 4 eggs
  • 1 1/2 cups milk
  • 1/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/4 tsp salt

Cinnamon Sugar Topping

  • 1/4 cup unsalted butter melted
  • 1/2 cup granulated sugar
  • 1 tbsp ground cinnamon

Instructions
 

  • Preheat oven to 350°F (175°C). Grease or line a muffin tin.
  • In a large bowl, whisk together the eggs, milk, sugar, vanilla, cinnamon, and salt.
  • Add the bread cubes to the mixture and gently stir to coat all pieces. Let sit for 5 minutes to absorb the liquid.
  • Spoon the mixture evenly into the muffin cups and gently press down to pack slightly.
  • Bake for 25 minutes or until golden brown and set. Let cool slightly.
  • Mix the cinnamon and sugar in a small bowl. Brush each muffin with melted butter and roll or sprinkle with cinnamon sugar mixture.
  • Serve warm, optionally with maple syrup or powdered sugar on top.

Notes

Use brioche or challah bread for richer flavor. You can make these ahead and reheat them in the oven or microwave.
