These Chocolate Chip Protein Muffins are a healthy and delicious snack or breakfast, packed with protein and the perfect amount of sweetness from chocolate chips. Great for meal prep or post-workout fuel!
Preheat the oven to 350°F (175°C) and grease or line a muffin tin with paper liners.
In a large bowl, whisk together the dry ingredients: flour, protein powder, baking soda, baking powder, and salt.
In a separate bowl, whisk together the wet ingredients: eggs, honey, applesauce, almond milk, and vanilla extract.
Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix.
Fold in the chocolate chips until evenly distributed.
Divide the batter evenly into the muffin tin, filling each cup about 3/4 full.
Bake for 18–20 minutes, or until a toothpick inserted into the center comes out clean.
Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
