Ingredients
  

Dry Ingredients

  • 1 1/2 cups whole wheat flour
  • 1 cup protein powder vanilla or chocolate flavor
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt

Wet Ingredients

  • 2 large eggs
  • 1/4 cup honey
  • 1/4 cup unsweetened applesauce
  • 1/2 cup unsweetened almond milk
  • 1 tsp vanilla extract

Mix-ins

  • 1/2 cup chocolate chips

Instructions
 

  • Preheat the oven to 350°F (175°C) and grease or line a muffin tin with paper liners.
  • In a large bowl, whisk together the dry ingredients: flour, protein powder, baking soda, baking powder, and salt.
  • In a separate bowl, whisk together the wet ingredients: eggs, honey, applesauce, almond milk, and vanilla extract.
  • Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix.
  • Fold in the chocolate chips until evenly distributed.
  • Divide the batter evenly into the muffin tin, filling each cup about 3/4 full.
  • Bake for 18–20 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.

Notes

These muffins are perfect for a grab-and-go breakfast or post-workout snack. Feel free to swap the chocolate chips for other mix-ins like nuts or dried fruit!
