Ingredients
  

For the Beef

  • 1/2 lb beef sirloin or flank steak thinly sliced against the grain
  • 1 tbsp soy sauce
  • 1 tsp cornstarch
  • 1 tsp sesame oil

For the Eggs

  • 4 eggs
  • 2 tbsp milk or water to make eggs fluffier
  • 1/4 tsp salt

For Cooking

  • 1 tbsp neutral oil like canola or vegetable oil
  • 1 tsp ginger minced
  • 2 cloves garlic minced
  • 1 tbsp soy sauce for seasoning
  • 2 tbsp green onions chopped, for garnish

Instructions
 

  • In a bowl, combine sliced beef with soy sauce, cornstarch, and sesame oil. Marinate for 10–15 minutes.
  • In another bowl, whisk together eggs, milk or water, and salt until smooth.
  • Heat 1/2 tablespoon oil in a wok or skillet over medium heat. Pour in eggs and cook gently, scrambling until just set. Remove and set aside.
  • Add remaining oil to the same pan. Sauté ginger and garlic for 30 seconds, then add marinated beef. Stir-fry until beef is browned and cooked through, about 3–4 minutes.
  • Return the scrambled eggs to the pan and add soy sauce. Stir everything together for 1 more minute until well mixed and heated through.
  • Garnish with chopped green onions and serve hot with steamed rice or noodles.

Notes

This dish is versatile—try adding sautéed onions, sliced bell peppers, or a splash of oyster sauce for extra flavor. For a saucier version, add a tablespoon of chicken broth or water before serving.
