halved horizontally and pounded thin

Instructions
Place halved chicken breasts between plastic wrap and pound evenly to about 1/4 inch thickness.
Set up a breading station: flour in one bowl, beaten eggs in another, and seasoned breadcrumbs in the third.
Dip each chicken piece into the flour, then eggs, then breadcrumbs, pressing gently to adhere.
Heat oil in a skillet over medium-high heat. Fry schnitzels 2–3 minutes per side or until golden and cooked through.
Transfer to a paper towel-lined plate. Serve with lemon wedges and your favorite side dish.
Notes
For extra crispiness, chill the breaded schnitzels for 15 minutes before frying. Serve with potato salad, mashed potatoes, or fries.
