This classic Chicken Kiev features juicy chicken breasts filled with rich garlic herb butter, breaded and fried until crispy and golden. A timeless favorite that's full of flavor!
In a bowl, combine softened butter, garlic, parsley, dill, salt, and pepper. Mix well and shape into a small log. Freeze for 15-20 minutes.
Place chicken breasts between plastic wrap and pound until about 1/4 inch thick.
Place a piece of frozen garlic butter in the center of each chicken breast. Fold in the sides and roll up tightly. Secure with toothpicks if necessary.
Coat each rolled chicken breast in flour, dip in beaten eggs, and coat with breadcrumbs.
Heat vegetable oil in a skillet over medium heat. Fry chicken until golden on all sides (about 2-3 minutes per side).
Transfer chicken to a baking sheet and bake in a preheated oven at 375°F (190°C) for 15-18 minutes, until fully cooked (internal temperature 165°F).
Let rest for 5 minutes before serving. Enjoy with a side of mashed potatoes or a fresh salad!
Notes
For extra crispiness, double coat the chicken by repeating the egg and breadcrumb steps. Make sure the butter log is fully frozen to avoid leaks during cooking!
