Chicken Kiev Recipe

Ingredients
  

For the Garlic Herb Butter

  • 6 tbsp unsalted butter softened
  • 2 cloves garlic minced
  • 2 tbsp fresh parsley chopped
  • 1 tbsp fresh dill chopped
  • 1/2 tsp salt
  • 1/4 tsp black pepper

For the Chicken

  • 4 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 eggs beaten
  • 1 1/2 cups breadcrumbs preferably Panko
  • 1/2 cup vegetable oil for frying

Instructions
 

  • In a bowl, combine softened butter, garlic, parsley, dill, salt, and pepper. Mix well and shape into a small log. Freeze for 15-20 minutes.
  • Place chicken breasts between plastic wrap and pound until about 1/4 inch thick.
  • Place a piece of frozen garlic butter in the center of each chicken breast. Fold in the sides and roll up tightly. Secure with toothpicks if necessary.
  • Coat each rolled chicken breast in flour, dip in beaten eggs, and coat with breadcrumbs.
  • Heat vegetable oil in a skillet over medium heat. Fry chicken until golden on all sides (about 2-3 minutes per side).
  • Transfer chicken to a baking sheet and bake in a preheated oven at 375°F (190°C) for 15-18 minutes, until fully cooked (internal temperature 165°F).
  • Let rest for 5 minutes before serving. Enjoy with a side of mashed potatoes or a fresh salad!

Notes

For extra crispiness, double coat the chicken by repeating the egg and breadcrumb steps. Make sure the butter log is fully frozen to avoid leaks during cooking!
