Ingredients
  

Pasta and Chicken

  • 8 oz rotini or penne pasta cooked and cooled
  • 2 cups cooked chicken breast grilled or rotisserie, chopped

Salad Base

  • 2 cups romaine lettuce chopped
  • 1/2 cup Caesar dressing use your favorite brand or homemade
  • 1/4 cup grated Parmesan cheese
  • 1 cup croutons
  • 1/4 tsp black pepper to taste
  • lemon wedges for serving (optional)

Instructions
 

  • Cook pasta according to package directions. Drain and rinse under cold water to cool. Set aside.
  • In a large bowl, combine the cooked pasta, chopped chicken, chopped romaine, Caesar dressing, and Parmesan cheese.
  • Toss everything together until well coated. Season with black pepper to taste.
  • Top with croutons and extra Parmesan, if desired. Serve immediately or chill for 20 minutes before serving.

Notes

Use grilled chicken for extra flavor. This salad is best eaten fresh, but you can store leftovers (without croutons) in the fridge for up to 2 days.
