Ingredients
  

For the Chicken

  • 500 g chicken breast boneless and skinless
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp salt or to taste
  • 1 tbsp lime juice freshly squeezed

For the Bowl

  • 2 cups cooked white or brown rice
  • 1 cup black beans cooked or canned, drained and rinsed
  • 1 cup corn kernels fresh or canned, drained
  • 1 avocado sliced or diced
  • 1/2 cup cherry tomatoes halved
  • 1/4 cup red onion diced
  • fresh cilantro chopped, for garnish
  • lime wedges for serving

Instructions
 

  • In a bowl, combine chicken with olive oil, chili powder, cumin, paprika, garlic powder, salt, and lime juice. Let marinate for 15 minutes.
  • Heat a grill pan over medium heat and cook the chicken for 6–8 minutes on each side or until fully cooked. Let rest, then slice.
  • In serving bowls, layer cooked rice, black beans, corn, avocado, cherry tomatoes, and red onion.
  • Top each bowl with sliced chicken. Garnish with cilantro and lime wedges. Serve immediately.

Notes

Customize with toppings like cheese, sour cream, or salsa for extra flavor. Great for meal prep – store ingredients separately and assemble when ready to eat.
