Ingredients
  

For the Chicken

  • 4 boneless, skinless chicken breasts
  • 4 slices ham thinly sliced
  • 4 slices Swiss cheese thinly sliced
  • 1 cup all-purpose flour
  • 2 eggs beaten
  • 1 1/2 cups breadcrumbs preferably Panko
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp butter melted, for drizzling

For the Optional Sauce

  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 3/4 cup milk
  • 1/2 cup chicken broth
  • 1 tbsp Dijon mustard

Instructions
 

  • Preheat oven to 375°F (190°C). Lightly grease a baking dish.
  • Place chicken breasts between two pieces of plastic wrap and pound them to an even thickness, about 1/4-inch thick.
  • Place one slice of ham and one slice of Swiss cheese on each breast. Roll tightly and secure with toothpicks.
  • Season the flour with salt and pepper. Dredge the rolled chicken in flour, dip in beaten eggs, and coat with breadcrumbs.
  • Place the breaded chicken into the prepared baking dish. Drizzle with melted butter.
  • Bake for 25-30 minutes, until the chicken is golden and cooked through (internal temperature of 165°F).
  • For the sauce: Melt butter in a saucepan. Whisk in flour and cook for 1 minute. Gradually whisk in milk and chicken broth, cooking until thickened. Stir in Dijon mustard. Serve over the chicken if desired.

Notes

Feel free to switch Swiss cheese with Gruyère or provolone for a twist! Serve with a fresh green salad or roasted vegetables.
