Ingredients

  • 3 cups cooked rice preferably day-old
  • 1/2 lb andouille sausage sliced
  • 1 cup shrimp peeled and deveined
  • 1 bell pepper diced (any color)
  • 1/2 onion diced
  • 2 cloves garlic minced
  • 2 tbsp soy sauce
  • 1 tbsp Cajun seasoning or to taste
  • 2 tbsp butter or oil
  • salt and pepper to taste
  • 2 green onions sliced, for garnish

Instructions
 

  • Heat butter or oil in a large skillet or wok over medium-high heat. Add sausage and cook until browned. Add shrimp and cook until pink, about 2–3 minutes. Remove and set aside.
  • In the same skillet, add onion, bell pepper, and garlic. Sauté until soft and fragrant.
  • Add cooked rice and break it apart. Stir-fry with soy sauce and Cajun seasoning until evenly coated and heated through.
  • Return shrimp and sausage to the skillet. Stir everything together for 1–2 more minutes. Adjust seasoning with salt and pepper as needed.
  • Garnish with green onions and serve hot. Enjoy the sizzling Cajun delight!

Notes

Use leftover rice for best texture. Customize with extra veggies or a splash of hot sauce for more heat.
