Ingredients
  

Shrimp

  • 1 lb large shrimp peeled and deveined, tails on
  • 1 tbsp olive oil
  • salt and pepper to taste

Cowboy Butter

  • 1/2 cup unsalted butter melted
  • 2 cloves garlic minced
  • 1 tbsp lemon juice fresh
  • 1 tsp Dijon mustard
  • 1 tsp paprika smoked if preferred
  • 1/2 tsp crushed red pepper flakes optional for heat
  • 1 tbsp fresh parsley chopped

Instructions
 

  • Preheat your grill or grill pan to medium-high heat. If using wooden skewers, soak them in water for 15–30 minutes.
  • Toss shrimp with olive oil, salt, and pepper. Thread shrimp onto skewers.
  • In a bowl, mix melted butter, garlic, lemon juice, Dijon, paprika, red pepper flakes, and parsley to make cowboy butter.
  • Grill shrimp for 2–3 minutes per side until opaque and slightly charred. Brush with cowboy butter during the last minute of grilling.
  • Transfer to a serving platter and drizzle with more cowboy butter. Garnish with extra parsley if desired.

Notes

Serve with grilled corn, rice, or crusty bread to soak up the flavorful butter. You can also toss with pasta or salad greens.
