Instructions
In a large bowl, combine green cabbage, red cabbage, carrots, red bell pepper, green onions, and cilantro. Toss to mix.
In a separate bowl, whisk together peanut butter, soy sauce, rice vinegar, lime juice, honey, grated ginger, sesame oil, and water until smooth.
Pour the dressing over the slaw and toss until well coated.
Let sit for 5–10 minutes before serving to allow flavors to meld. Garnish with extra cilantro or chopped peanuts if desired.
Notes
This slaw keeps well for a few hours in the fridge and can be topped with grilled chicken or tofu for a full meal.
