Ingredients
  

Slaw

  • 2 cups shredded green cabbage
  • 1 cup shredded red cabbage
  • 1 cup shredded carrots
  • 1 red bell pepper thinly sliced
  • 2 green onions sliced
  • 1/4 cup chopped cilantro

Ginger Peanut Dressing

  • 1/4 cup creamy peanut butter
  • 2 tbsp soy sauce low sodium preferred
  • 1 tbsp rice vinegar
  • 1 tbsp lime juice freshly squeezed
  • 1 tbsp honey
  • 1 tsp fresh ginger grated
  • 1 tsp sesame oil
  • 2 tbsp water or as needed to thin dressing

Instructions
 

  • In a large bowl, combine green cabbage, red cabbage, carrots, red bell pepper, green onions, and cilantro. Toss to mix.
  • In a separate bowl, whisk together peanut butter, soy sauce, rice vinegar, lime juice, honey, grated ginger, sesame oil, and water until smooth.
  • Pour the dressing over the slaw and toss until well coated.
  • Let sit for 5–10 minutes before serving to allow flavors to meld. Garnish with extra cilantro or chopped peanuts if desired.

Notes

This slaw keeps well for a few hours in the fridge and can be topped with grilled chicken or tofu for a full meal.
