30-Minute Peanut Beef Rolls

Ingredients
  

  • 1 lb ground beef
  • 1/4 cup peanut butter
  • 2 tbsp soy sauce
  • 1 tbsp ginger, grated
  • 1 clove garlic, minced
  • 1/4 cup scallions, chopped
  • 4 large tortillas
  • 1 tbsp vegetable oil
  • 1/2 cup cilantro, chopped

Instructions
 

  • Heat a skillet over medium heat and add vegetable oil. Add the ground beef and cook until browned, breaking it apart with a spoon.
  • Once the beef is fully cooked, add the garlic and ginger. Cook for another 1-2 minutes until fragrant.
  • In a small bowl, mix the peanut butter, soy sauce, and 2 tbsp of water until smooth. Add the peanut sauce mixture to the beef and stir to combine.
  • Warm the tortillas in a separate skillet or microwave for 10 seconds to make them pliable.
  • Place a portion of the beef mixture in the center of each tortilla. Sprinkle with chopped scallions and cilantro.
  • Roll the tortillas tightly and serve immediately, garnished with extra cilantro if desired.

Notes

For a spicier version, you can add a dash of chili flakes or sriracha to the peanut sauce. These rolls are great with a side of steamed vegetables or a simple salad.
